Pumpkin pancakes

"Fritole de suca"

Ingredients:
1 pumpkin "marina" (250 g. pulp cooked).
200 g. flour.
100 g. sugar.
6 eggs.
½ l. milk
100 g. sultanas.
1 small glass of rum.
The rind of a lemon rind.
1 teaspoon of cinnamon powder.
Pinch of salt.
Oil or lard for frying.
Sugar.

Recipe:
Soak the raisins with the rum and water.
Remove the peel the pumpkin and cut it into slices.
Put it in a pan to cook without seasonings until it loses all its water, or cook in the oven again without seasoning.
Strain the pumpkin and weighed 250 g. pulp puree.
Dissolve the sugar in milk and add the lemon zest.
Boil the milk.
Add the flour to the boiling milk, stirring well.
Strain the pumpkin and weighed 250 g. pulp puree.

Squeeze the raisins and add to the dough.
