ciappe
mascarpone
pumpkin
parmigiano reggiano
pepper, salt, nutmeg, peperoncino
honey
lemon juice
oljfolie
garlic, pressed
Cut pumpkin into small pieces and mix with pepper, salt, nutmeg, garlic, lemon juice and olive oil.
Place on a baking tray and grill until the pieces are tender. Puree then to a (gross) mashed with honey. You want a good sweet-acid ratio have.
Bring the mascarpone to taste with salt and peperoncino. Not too salty, but you must taste the pepper.
Spread the mascarpone ciappe pieces, crush it on the pumpkin puree and garnish with a swirl parmigiano reggiano.
